Chef Bloc Series - Maui Event at the Ka'ana Kitchen, Andaz
Maui's monthly Chef Bloc events featured innovative cuisine from the island's most talented chefs, including our own Jeff Scheer!
You may have played duck duck goose as a child, but chances are you never ate the game. We fondly look back on one of Maui's most memorable Chef collaborations, the Chef Bloc 'Duck, Duck, Goose'.
Remembering Duck, Duck, Goose
The brainchild of Ka'ana Kitchen's Chef Isaac Bancaco, Chef Bloc was a monthly statewide collaboration dinner that offered 12 lucky guests the chance to watch and interact with several of Hawaii's best chefs.
The first of these events, held at the gorgeous Andaz Maui Resort's Ka'ana Kitchen, included Bancaco alongside Chefs Sheldon Simeon of Migrant Maui and our own Jeff Scheer of The Mill House.
The event kicked off at Haiku's Malama Farms, where each chef was able to catch, kill and prepare their own three Muscovy ducks, a good reminder of where our food comes from, and the importance of sourcing locally.
Dinner was held in the cozy yet romantic Andaz Salon, the perfect setting to enjoy an up-close view of each chef's process in prepping, making and plating dishes.
Local sommeliers and bartenders were also there to help pair accompanying beverages for guests, choosing cocktails and wine that added to the flavors of the evening's focus ingredient, duck.
The dinner featured 9 courses in total, including inventive menu items like Scheer's Cured Duck Breast with Kupa'a Roots, Bancaco's deconstructed Peking Duck, Simeon's Duck Neck with Li Hing Mui and Shiso, and even desserts like a Foie and Chocolate Pots De Crème and Foie Malasada with Lilikoi Sugar.
Diners were invited to interact with the chefs, and took advantage of the intimate group setting to ask questions and learn how these amazing chefs are able to do what they do.
The event has featured many guest chefs, invited from all throughout the state of Hawaii, and typically included six courses, grown-on Maui ingredients, and unique wine and cocktail pairings, along with a rotating theme for the menu.
